- 1 cup of packed brown sugar
- 3/4 cup of peanut butter
- 1/2 cup of coconut oil
- 1 tsp of vanilla extract
- 1/4 cup of applesauce
- 1 1/2 cup of flour
- 1 tsp of baking soda
Pre-heat oven to 375 degrees. Mix all ingredients together until well blended. Scoop into balls on a cookie sheet and press with a fork in a criss-cross pattern. Bake for 6 to 8 minutes – depending on your oven.
Let cool on cookie sheet for one minute after taking out of the oven and then move to a plate or rack for further cooling.
Enjoy with a glass of almond milk and you’ve got it going on!
